These Thin Mint Cookies seriously taste like the girl scout version. However, you can make them at home all year long with just two ingredients!

I don’t know what it is, but, do you ever just get the craving for Girl Scout Thin Mint Cookies? I do! I use to keep boxes in the freezer until I made this recipe and was like yeah, I’ll always be able to satisfy my own craving when it hits!
Now, I’m going to pre-warn you. The Andes Baking Mints are hard to come by especially when it’s not “baking season”. So save yourself some frustration and order from Amazon or grab the mints at your local grocery store and have the kids unwrap them! That’s what we use to do before the chips came out.
How to melt chocolate in the microwave?
Pour a bag or two of chocolate chips into a microwave safe bowl. In :30 second increments melt the chocolate. In between adding additional time, be sure to give them a good stir. If you don’t you can very easily burn your chocolate.

Towards the end of the melting process you may have a few clumps of chocolate. Just give it a good stir until the chocolate is smooth in consistency.
Ingredients for Thin Mint Cookie Recipe

- Andes Baking Chips
- 2 sleeves Ritz Crackers
How to Make Thin Mint Cookies at Home

In a medium bowl, place the Andes baking chips. Microwave in :30 increments until fully melted.

Once the chocolate is smooth, place a ritz cracker in the melted chocolate.
With a fork, submerge the entire cracker until covered.
Allow excess chocolate to drizzle off the fork.

Place on a sheet of parchment paper.
Repeat until all the chocolate has been used.

If you’d like to put sprinkles on to celebrate a holiday, birthday or shower add it before the chocolate hardens.

Allow chocolate to harden for 20-30 minutes before enjoying, packaging or moving onto a plate for presentation and serve.
