Our kids LOVE this Chicken Broccoli Rice Casserole recipe! I love it because it’s so simple to make the kids will actually make it!

We first had this recipe when we were visiting my “Sissy” in Florida a few years ago. We went to say hi to her Italian Momma and she wouldn’t let us leave without feeding us dinner. There were 10 of us and she made two versions, with shredded cheese on top and one without shredded cheese on top. Needless to say, when we got back home, both the girls as if I could make this recipe. It’s became a staple in our house ever since and I ALWAYS have the ingredients on hand.
Can I put uncooked rice in a casserole?
You can put uncooked rice in a casserole recipe. However, you need to ensure that there is equal parts liquid (water, chicken or beef broth, etc.) to ensure that the rice cooks properly.

Ingredients Needed to Make Chicken Broccoli Rice Casserole
- cooked rice
- cooked chicken breasts
- broccoli florets
- eggs
- cream of chicken
- milk
How to Make Chicken Broccoli Rice Casserole
If you are not freezing this meal, preheat your oven to 350.
Start by preparing your rice and chicken. Place 4 cups of water in a large pot and heat over medium high heat. Once the water boils, add in your rice and remove from the heat. Be sure to cover the rice. Allow to sit for about 5 minutes and stir.

While the rice is doing its thing, place a skillet over medium heat. Add in olive oil and your diced chicken.

Once the chicken has cooked, add in your seasonings. I use garlic salt and pepper.

In a large bowl or a casserole dish, all your rice, cooked chicken, cream of chicken soup, milk and eggs. Mix everything until combined.

Add in your broccoli. I just buy the steam bags and pop in the microwave. Due to the fact we are boujee I take two knives and run it through the broccoli to quickly chop it up…and less dishes!
TIP: You may want to add extra milk if your mixture is dry.

Top if shredded cheddar cheese if using and cook for 20-30 minutes.
TIP: Cover your casserole dish with aluminum foil to ensure it doesn’t dry out.
