What’s the best meat for Steak Quesadillas?
Honestly, it’s all in personal preference and a lot of it is cost for me. We typically make steak quesadillas when we have leftover steak from steak tacos. However, if you don’t have any left over steak I prefer a flank or skirt steak. After the steak has cooked it’s a much softer cut of meat and chews better.
What are good substitutions for Steak Quesadillas?
If you don’t have steak on hand, you can totally substitute chicken for the steak.
We like to put onions and mushrooms in ours. However, you may want to substitute:
- green peppers
- jalapenos
- diced tomatoes
- corn
- bacon

Ingredients Needed for Steak Quesadillas
For our steak quesadillas this is the ingredients we use most often:
- Steak
- Onions
- Mushrooms
- Mexican Blend Cheese
- Cajun Seasoning
- Butter
- Tortillas
Do I have to put the cajun seasoning on steak quesadillas?
Honestly, the cajun seasoning is life changing when put on quesadillas. This is often how restaurants cook theirs. To be honest (don’t tell Jay) he taught me this. When I took a bite out of the Steak Quesadilla he made, I was hooked!
How to Make Steak Quesadillas?

Sprinkle cajun seasoning or your favorite steak seasoning on both sides of the steak.

Place in a greased air fryer basket at 350° or the blackstone and cook for 6-8 minutes for medium rare, 8-10 for well done.

Once the steak is cooked to your liking, allow it to rest for 5 minutes. This helps to seal the juices in.
Then cut the steak into bite sized pieces.
TIP: You can cut the steak into bite size pieces and cook in the air fryer or the blackstone. However, I like keeping the steak whole if I can so that it locks in the juices in the steak during the cooking process. In my opinion, when you cut steak and cook it you not only get a drier end result, but you also end up with a tougher chew.

On a flour tortilla spread butter over the entire tortilla in an even layer. This allows the cajun seasoning to stick to it and gives it a nice golden brown color once cooked.

Sprinkle the cajun seasoning over the butter and place side down on the Blackstone, a skillet or griddle.

On the side that doesn’t have the butter and cajun seasoning, sprinkle an equal amount of your favorite cheese or whatever you have on hand all over the quesadilla. We ALWAYS have Mexican blend, mozzarella and cheddar on hand and have made it with them all.

Top the cheese with mushrooms, onions and steak (or any of the other substitutions you are using) on half of the side of the quesadilla.
The cheese only will help to melt on top of the steak and keep all of the ingredients in place.

Fold the tortilla in half by flipping the cheese only side over. Let the cheese melt for a minute or two (every Blackstone distributes heat differently I’ve found so know your Blackstone!).

Cut and enjoy with your favorite sour cream, salsa, pico de gallo or just plain!

How to Make a Quesadilla in the Air Fryer?
You can TOTALLY make this entire recipe in the Air Fryer. We just happen to have both and prefer it cooked on the Blackstone because it gives the tortilla a crispier tortilla.
Simply cook the steak.
Layer the quesadilla on one side with the cheese first, then the steak and/or whatever other ingredients you are using.
Top the steak or the last ingredient you place down with cheese. This will help the tortilla stick and keep all of the ingredients in place.
Place in a greased air fryer basket and cook at 350° for 6-10 minutes. You may want to flip halfway through to ensure both sides of the tortilla cook evenly.
How to Store and Reheat Steak Quesadillas
Place any leftover quesadillas you have in a ziploc bag or air tight container. They will stay good for 1-3 days.
Reheat in the air fryer for 3-5 minutes at 350°, the oven at 350° for 10-15 minutes or the microwave if you don’t care that the tortilla comes back out crispy. You can also reheat it in a skillet, just make sure to flip it over to heat all sides.
